Hello! I intended to write a special pancakes recipe. Something like oats-pancakes, maybe with banana, or filled with Nutella. (I have tried all of these!). But when I realized that most of my friends have not even made the simple, plain pancakes, I just thought I had to convince them to try them! Pancakes are our favorite breakfast (only on weekends of course!). They are easy, delicious and you can serve them either sweet or salty!
The first time we tasted them was several years ago in Paris. They were part of the hotel’s breakfast buffet. We loved them so much that I can really not remember how many times we refilled our dishes! When we came back to Greece, I searched for a recipe to make them at home. You see, pancakes were not so widespread in Greece at that time. Let’s see the simple recipe for easy fluffy pancakes!
- 1 cup all-purpose flour
- 2 tsp baking powder
- 2 spoons of Sugar
- 1/2 tsp Salt
- 3/4 cup of milk
- 2 spoon Butter
- 1 egg
Mix in a bowl the solid ingredients (flour, sugar, baking powder, salt) and in another bowl mix the liquids. Then add the solids to the liquids and stir gently. Just mix them, we do not want the mixture to be completely homogenized like in crepes recipe.
Heat a non-stick pan. Put a dose (about two tablespoons, but you can adjust it to the pancake size you wish). As soon as it starts making small blisters, turn the pancake over with a spatula. I usually use a plastic or silicone spatula for this job because it is easier to use. Let it one or two more minutes in the pan and then pull it off. Continue in the same way until all of the dough is over.
Then eat them as they are or garnish with what you like. The simplest version is praline, turkey and cheese or jam. In the photos, I accompany them with peanut butter, praline, berries marmalade and fresh red berries. I put a layer of pancake, peanut butter, pancake, praline and then the marmalade and the berries. The combination of sweet with salty is fantastic!
Do not just make one dose! It will not be enough! I hope the photos have made you want to try it!
